Fancy some asparagus? Perfect! Because today we're sharing a simple and delicious risotto recipe with you. Are you ready?

What culinary spring highlight belongs to holidays in South Tyrol? Yes, it’s the delicious asparagus. Today we’d like to present you with one of our favourite recipes: Asparagus risotto, the spring classic par excellence. The best thing about it is that the risotto is very easy and quick to prepare. Success is almost always guaranteed!

What you need to feed four people:

  • 160g rice
  • 750ml asparagus water
  • 4 asparagus spears
  • 1 small onion
  • Butter and olive oil
  • Parmesan
  • Parsley
  • Salt and pepper

And here’s how to prepare it:
Peel the asparagus, cut them into pieces, and cook them in salted water for about 15 minutes. Dice the onion. Briefly sauté and sweat it in a pan with olive oil and a little butter. Add the rice to the onion and pour in the asparagus water in little by little while constantly stirring. Simmer gently until the rice is cooked (al dente). Add the asparagus, season to taste, and grate in some Parmesan. Let the risotto rest for 5 minutes. Serve with a little parsley and a bit more Parmesan.
